"The impact of diet on oral health and the link to systemic disease": Dental caries is the most common noncommunicable disease worldwide. While the development of caries in multifactorial, consumption of fermentable carbohydrates increases the accumulation of plaque biolfilm which has been implicated in the development of both caries and periodontal disease. This webinar will provide an overview of the impact of diet on oral health throughout the life course with a focus on the relationship between oral health and systemic health.
"Nutrition and Oral Health: An Emerging Area of Dietetic Research in Canada": Nutrition and oral health have a close relationship with one another. Nutrition is an important modifiable contributor to oral diseases (e.g., dental caries), and poor oral health can impact dietary intakes. Oral diseases affect billions of people worldwide and are also a burden in Canada, yet few dietitians in Canada specialize in this area and there is limited research conducted in this discipline by members of the dietetic profession. This presentation will outline new research that has been conducted in the area of nutrition and oral health (with a focus on dental caries) in Canada.
Learning Objectives:
At the end of the webinar, participants will be able to:
- Explain the link between fermentable carbohydrate consumption and the development of dental caries and periodontal disease
- Describe appropriate diet modifications to reduce the risk of developing dental caries
- Discuss the between oral health and systemic health
- Become familiar with results from a recent scoping review of research on ‘real-world’ nutrition care practices to optimize oral health
- Be able to discuss some current research regarding nutrition and dental caries being conducted in Canada

About the Speakers:
Heather Doucette, Dip DH, BSc, MEd, is an Associate Professor in the School of Dental Hygiene, Faculty of Dentistry, Dalhousie University. She has served as a content knowledge expert for national clinical competencies, has published original research in peer reviewed journals in addition to textbook chapters, and has presented at local, national and international conferences. She is passionate about improving access to oral care for underserved populations. She is currently completing an Interdisciplinary PhD at Dalhousie University through which she will continue her research into barriers to oral care faced by new refugees to Nova Scotia
Jessica Lieffers, PhD, RD - is a Dietitian and has been an Assistant Professor in the College of Pharmacy and Nutrition at the University of Saskatchewan since 2017. She completed her BSc, dietetic internship and MSc at the University of Alberta, and her PhD at the University of Waterloo. At the University of Saskatchewan, she currently teaches in the BSc Nutrition program and mainly in professional practice courses. She is a co-author on more than 40 peer-reviewed publications on various topics related to nutrition and dietetic practice. Much of her current research is in the area of nutrition and oral health and is funded by the Saskatchewan Health Research Foundation and the Canadian Foundation for Dietetic Research. She is also currently a member of the Board of Editors for the Journal of the Academy of Nutrition and Dietetics.
